Stockfish Palermo - Stocco alla Palermitana

A quick and easy recipe to make, perfect for a single course.

Ingredients (6 people)

  • 2 lbs soacked stockfish

  • 1 cup canned tomatoes

  • 1 tbs washed capers

  • 1 sliced onion

  • 1/2 lb diced potatoes

  • 1/2 cup extra virgin olive oil (EVOO)

  • 1/4 lb chopped green olives

  • Salt and pepper to taste

Preparation:

Cut the soaked stockfish into 3-inch pieces.

Wash in running, cold water.

Heat EVOO in a large saucepan; sauté fish and all ingredients, except tomatoes, for 15 minutes.

Stir frequently.

Add tomatoes and enough warm water to cover them all. Lower the flame; add very little salt and pepper; cover.

Cook slowly for about 10 minutes, or until potatoes are tender.

Serve warm.
