Spaghetti with anchovies - Spaghetti con le acciughe

A simple first dish made with only two ingredients, in addition to pasta, that is ideal for a last-minute dinner with friends who have thrown together an impromptu dinner or for those legendary midnight spaghetti parties with foodies!

Set a 10-minute timer and let's get started!

Servings: 4-6 people

Ingredients:

1 lb. Spaghetti

½ cup extravirgin olive oil

1 clove garlic

12 filets of anchovy

1/3 cup toasted bread crumbs.

Chopped fresh parsley

Salt and Pepper to taste

Serves 4 to 6


Preparation:

Step 1

Fry garlic in hot extravigin olive oil about 3 minutes until brown. Then remove the garlic.

Step 2

Cut anchovies in ½ inch pieces and add to hot oil; cook for 2 minutes: stir constantly. Add a little pepper.

Step 3

Cook the spaghetti in abundant boiling salted water “al dente”. Drain, put the spaghetti in the skillet, where sauce is (oil & anchovies) and stir.

Step 4

Arrange on individual heated plates and top with toasted bread crumbs and chopped fresh parsley.

Wine:

I would pair with a red Aglianico del Vulture.
