Sweet and Sour tuna - Tonno Agro e Dolce
Tuna with sweet and sour onions is a traditional Sicilian meal known as “tunnina ca cipudda”. It is a simple dish with few ingredients but rich in flavor and aroma, and it is especially delicious when served cold. Make sure the tuna is fresh enough to simply be barely seared, then make the sweet and sour onions and serve with a glass of chilled white wine.
Servings: 4-6 people
Ingredients:
2 lbs. fresh tuna fish
1/2 cup extra virgin olive oil
2 large onions, sliced
6 tbs. white wine vinegar
1-1/2 tsp. sugar
Salt & pepper to taste
4 springs fresh mint or sweet basil chopped
Preparation:
Step 1
Slice tuna fish 1-1/2 inches thik, season with salt & pepper.
Step 2
Pour olive oil in skillet; heat; fry fish untill brown on both sides. Remove fish and set aside.
Step 3
Cook sliced onions slowly in the same oil untill soft; add vinegar, sugar, mint or basil. Cover; cook slowly 5 minutes.
Step 4
Place fish in the onion sauce, cover, cook slowly 3 minutes more.
This dish may be served cold. If so marinate fish in a cool place. The longer it marinates the better the flavor.
Wine:
I would pair with a white Greco to be served cold.
